About This Coffee
The Wush Wush varietal is one of Ethiopia's most prized and rare coffee treasures, named after the town in the Bench Maji zone where it was first discovered. This particular lot comes from a 350-member farmer cooperative in the Oromia region's Hambela area, growing at extreme elevations of 2,100 to 2,300 meters above sea level where the unique terroir creates exceptional complexity.
What makes this coffee extraordinary is the 120-hour extended dry fermentation process. After selective harvesting of only the ripest cherries, they undergo a controlled fermentation for five full days before being moved to raised drying beds for 18 to 21 days. This extended fermentation develops the explosive fruit-forward characteristics and wine-like complexity that Wush Wush is celebrated for.
Brewing Tip
This coffee shines as a pour over or AeroPress. Use a 1:16 ratio with water just off the boil (200–205°F) to bring out the bright fruit notes without over-extracting. Expect the blueberry sweetness to become even more pronounced as it cools.
